vanilla wafers
two 8-oz. pkgs. cream cheese
3/4 cup sugar
2 eggs
1 1/2 tsp. vanilla extract |
Preheat oven
to 350 degrees. Lightly grease bottoms and sides of each tin.
Crush the vanilla
wafers finely and distribute them evenly among each of the 12
tins. In a mixing bowl, beat cream cheese, sugar, eggs and vanilla
until light and fluffy. Fill each tin with mixture, almost to
the top. Bake 15 minutes.
When cool,
top each mini cheesecake with a spoonful of pie filling or garnish
with fresh fruit. |
