Goat Chicken Rolls
(from www.thefoodloop.com/recipes)

4 (6-7oz.) chicken breast halves
1/2 cup goat cheese
1⁄4 cup sundried tomatoes
fresh chopped basil
fresh chopped garlic
1⁄4 cup olive oil
For sauce
1 cup dry white wine
2 tsp. butter

Preheat oven to 425 degrees. Gently pound and flatten the chicken breasts. Evenly layer on cheese, tomatoes, basil and garlic. Roll up each breast. Place 2-3 food loops around rolled chicken and cinch tightly to secure. Heat oil in ovenproof pan on medium-high heat and brown chicken rolls, making sure food loop ends do not hang over the side of the pan. Bake for 15 minutes to finish cooking. Remove the food loops. Deglaze the pan with wine, reduce heat and whisk in butter. Pour sauce over the rolls to serve.
