Swiss Diamond Skillets
Just when you think you’ll never need another skillet, a better one appears. Swiss Diamond has discovered a way to turn the world’s hardest stone into the world’s best cooking surface. And although nothing conducts heat more efficiently than diamonds, the real appeal of this cookware is that it’s free from perfluorooctanoic acid (PFOA). That’s the synthetic chemical produced in manufacturing most other non-stick cookware, but entirely absent from Swiss Diamond. These skillets go into the dishwasher, withstand oven temperatures up to 500 degrees, and feature a perfectly flat base to accommodate ceramic, gas and electric cook tops. We recommend this cookware because food won’t stick to its surface, but most importantly, because PFOA won’t stick in your stomach.

Espresso-A-Go-Go White Cupcakes
|
|
|
1/2 cup butter, room temperature
1 cup granulated sugar
2 large eggs, separated, room temperature
1 tsp. vanilla extract
1 1/2 cups all-purpose flour
1 1/2 tsp. baking powder
1/4 tsp. salt
1/2 cup milk
1/8 tsp. cream of tartar
cocoa powder for decoration
|
Preheat oven to 350 degrees. Put liners in a cupcake pan.
In a large bowl, beat the butter with an electric mixer on medium speed until soft, about 2 minutes. Add the sugar and beat until light and fluffy, about 3 minutes. Add the egg yolks one at a time, beating after each addition. Add the vanilla and beat until combined.
In a separate bowl, combine the flour, baking powder and salt.
With the mixer on low speed, alternately add the flour mixture and milk until well combined.
In a small bowl, using clean beaters, beat the egg whites on high speed until foamy. Add the cream of tartar and continue beating until stiff peaks form. With a rubber spatula, stir a little of the whites into the batter to lighten it, then fold in the remaining whites just until combined. Be careful not to over-mix.
Fill the cupcake liners three-quarters full. Bake for 15-20 minutes or until a toothpick inserted in the center comes out clean. When cool, choose your favorite decorating stencil pattern, and position over top of cupcake. Dust cocoa powder through a fine sieve to create your design.

Steakhouse Burger Press
Elizabeth Karmel, creator of this hamburger press, is proud of its ability to “eliminate the swollen belly burger forever.” (We assume no pun is intended.) When you press the pusher plate into the meat, it imprints a “thumbprint” in the top of the hamburger. As your burger cooks and expands, the hole made by the thumbprint flattens out, and -- you guessed it – eliminates that unsightly swollen belly burger. Use this press to turn out perfectly shaped patties, ranging from junior-sized quarter-pounders to Chicago Steakhouse-generous, three-quarter pound beefy burgers. Listen to Ms. Karmel, author of Taming the Flame, and you too can become a famous Burger King, right in your own backyard.

Small Raclette
At half the price of our full-sized raclette for eight ($84.99), this Small Raclette turns out an authentic Swiss dinner for four. The word “raclette” comes from the French verb “racler,” meaning “to scrape,” and refers both to

and cornichons or other pickled vegetables. When you’re tired of fondue but still craving a Swiss cheese fix, the Small Raclette will help you serve up something different for dinner.

| Apple Cinnamon Tart |
|
| 1 3/4 cup flour
1/3 cup sugar
1/8 tsp. salt
3-4 tsp. cold water
8 Tbsp. butter
1 egg yolk
5 medium Granny Smith or
Golden Delicious apples
1/3 cup apple juice
1/2 cup sugar
1 tsp. cinnamon
1/4 cup sugar
1 Tbsp. water |
Combine the flour, sugar and salt in a mixing bowl. Cut butter into small pieces. With pastry cutter or fork, cut butter into flour mixture. Add the egg yolk. Cut until mixture
resembles coarse crumbs. With lightly floured hands, press dough together until smooth. Wrap in plastic wrap and chill for two hours.
Grease square springform pan. Preheat oven to 400 degrees.
Peel, core and slice 3 apples. Place in small saucepan and add sugar, cinnamon and apple juice. Cook until the liquid has evaporated.
Press two-thirds of the dough into the pan, allowing the edges to touch the sides of the pan. Bake for 10-15 minutes, until lightly golden. Cool on wire rack.
Press the remaining dough against the edges of the springform pan. Pour the apple mixture into the pan and smooth it over the bottom crust. Peel, core and slice the remaining apples into thin slices and
lay them decoratively over the mixture. Bring the sugar and water to a boil and caramelize. Pour over sliced apples.
Bake the tart for 15-20 minutes. Serve warm, topped with vanilla ice cream, or cool completely and decorate with powdered sugar. |

Lodge Logic Cast Iron Cookware
With this new line of pre-seasoned cast iron cookware, you can eliminate the traditional process of oiling, baking and cooling before use. Lodge Logic pots, pans and skillets are electrostatically coated with oil and cured at high temperatures which allow the oil
to deeply penetrate the surface of the cast iron. As the manufacturing company says, "We should have thought of this 100 years ago." Obviously, 2002 was soon enough, since the line has already won numerous awards as one of the best new products introduced
last year. Bon Appetit calls it a "gotta have it gadget," while Real Simple describes it as "consummate cookware."

Toddy Coffeemaker
Because you brew it cold, Toddy coffee tastes better hot. Connoisseurs in Latin American countries have practiced this technique for hundreds of years. Now you can use the Toddy Coffeemaker to make a pure, rich concentrate
you store in the refrigerator. The coffeemaker brews either a pound or half pound of any regular grind coffee at one time. For hot coffee, you simply add one ounce of Toddy coffee concentrate to one cup of hot water. The result is never bitter, always rich and smooth
tasting. Because it’s cold-water brewed, Toddy coffee retains all its flavor, while the heavy oils and acids released by heat remain behind in the grounds. People who have not been able to drink coffee before swear by the Toddy brew. Serious coffee-lovers discovered
it long ago. Each cloth filter lasts approximately 6 months.

Microplane Graters
You may recognize it as the familiar carpenter’s rasp, but the Microplane zester is currently creating quite a buzz in upscale kitchens everywhere. The word is that Martha Stewart ordered several hundred to
give as gifts one Christmas. And no wonder – these stainless steel, razor-sharp tools shave zest off citrus fruit and grate cheese perfectly, with just a gentle sweep down their surface. Lee Valley Tools – which carried the rasp long before the owner’s
wife conceived of using it to make her Armenian orange cake – has reported a jump in sales from 1-2 dozen per month to over 10,000 a year. Good story; grate product.
Sometimes it’s the smallest items that make the biggest difference in your kitchen. Hence, the ribbon-blade graters from Microplane. These seemingly simple, hand-held graters give you short, perfect curls of
cheese or citrus fruit with every stroke. Best of all, you can grate and shred in both directions, making a back-and-forth motion - not only the most natural, but the most efficient as well. Whether your specialty is grilled cheese sandwiches or lemon meringue pie,
you’ll love the ease of these new graters.

the classic French Mouli grater. Microplane's version has a larger hopper, longer handle, and a pouring lip for easier grating of cheese, chocolate and nuts. Should you choose to show it off, the clear/black grater makes a stylish addition to your table.

The flat, counter-top scale adjusts to hold most bowls or containers, and the digital display is easy to read. It also incorporates a kitchen timer.

Butter Keeper
What good is freshly-baked bread without a ready supply of soft butter? If you’ve found it impossible to keep butter at a spreadable temperature, we’ve found your answer. Our butter keeper is based on
a centuries-old French design. You simply pack a stick of softened butter in the top part of the “bell,” then up-end it into water you’ve poured into the bottom part. You can easily store your butter on the kitchen counter, because the water prevents
air contact, thereby keeping it fresh for up to a month. Now, what will it be: French, cinnamon-raison, or wheat?

Brisker
You don’t need the National Climatic Data Center to point out that moisture in the air is absorbed by dry foods, which causes them to lose their crispness. Instead, we clearly need a Brisker to protect potato
chips, dry cereals, crackers, bread crumbs and other pantry staples. But just for fun, here’s the official scientific evidence. “Assume a kitchen at 70 degrees and a relative humidity of 80 percent. The temperature inside the Brisker on the kitchen counter
is approximately 98 degrees, which means it is warmer than the kitchen air and can hold more moisture in suspension. This causes the 80 percent relative humidity in the kitchen to drop to 35 percent inside the Brisker. At this level, moisture in the air is not absorbed
by dry foods; thus, they stay crispy.” Class dismissed. Pass the pretzels.

Leakproof Springforms
The Noblesse springform pan cannot reduce the number of calories in your cheesecake, but it can reduce the number of problems you have in making it. These non-stick pans are cleverly designed with a bottom lip extending
3/8” beyond the edge of the pan wall. This creates what the manufacturers call “a mini moat” to catch dripping butter or batter before it hits your oven floor. Another very attractive feature of the Noblesse pan is its absolutely flat bottom, which
allows you to slide your baked cake smoothly onto the serving platter. (Most springform pan bottoms have a rim around the perimeter of the base which makes it difficult to remove cakes, particularly cheesecakes with crumb crusts.) Now, admit it. Isn’t that a
great excuse to make a cheesecake more often? Available in 3 sizes.
