Dressing
3 cloves garlic, chopped
1 tsp. anchovy paste
1 tsp. Dijon mustard
2 egg yolks
8 Tbsp. olive oil
2 Tbsp. red wine vinegar
salt and pepper to taste
Salad
1 head romaine lettuce
salad croutons
Parmesan cheese shavings

Whisk first four salad dressing ingredients together. Slowly add olive oil, red wine vinegar, and salt and pepper.
Tear up one head romaine lettuce into bite-size pieces. Toss with croutons and dressing. Using Microplane large shaver, make thin slices of parmesan cheese and arrange on top of salad.
